Meet Wilderness Mountain Garlic

Welcome to our family farm! After a long winter in Northeastern Pennsylvania, Wilderness Mountain Garlic will be ready to harvest in August. We started growing garlic and raising honey bees in 2017 for our family and friends because we love dishes made with garlic and also for the health benefits of the garlic and honey. We realized that the store-bought garlic largely comes from another country, is months-old by the time it reaches our stores, and is bleached white. Over the years we’ve continued to expand our farm due to the overwhelming response for our garlic.

We back our garlic with a 100% satisfaction guarantee. Orders are shipped as we receive them, except for advance orders.  

We use no pesticides!  We only use organic fertilizer and compost, even though we’re not certified organic growers.

This year we will also begin selling our honey.

Growing garlic is not difficult. Even if you are not a seasoned gardener, you can grow great garlic if you start with quality seed garlic and follow a few simple steps. Harvesting honey on the other hand is time consuming and is a more difficult process.

Planting Directions

I only plant hardneck garlic which does well in the cold temperatures of the Northeast. Try to plant approximately 14 – 30 days before your first hard frost in the Fall. This will help the garlic develop a strong root system before the ground freezes. Garlic likes a pH of 6.5 – 7, so add organic matter (compost). Plant garlic in soil that drains well. It does well in raised beds. Separate cloves, leaving their skin on, and plant approximately 2″- 4″ deep with pointed end up and 6″ apart. Cover with approximately 4″ of mulched leaves or straw (seedless). This will protect garlic in the winter from heaving and controls weeds in the Spring; weeds are one of the worst enemies of garlic. Keep the soil evenly moist. Harvest is in the following season,
mid-summer, approximately 240 days from planting. You’ll know when it’s ready when half the leaves turn brown. Hang harvested plants from stems for approximately 2-3 weeks in a well-ventilated area, out of sunlight. Once dried, cut the stem approximately 1/2″-1″ above the bulb and trim the roots. Store in mesh bags in a cool, dry place. Enjoy throughout the winter.

Carmella Red is a porcelain garlic grown by a friend’s Italian grandmother. It does originate in Italy. It has a beautiful red color which produces a medium-sized bulb and has approximately 4-6 cloves per bulb. It does very well in the cold climates of the Northeast. Carmella Red has a nice, bold flavor that has a slight spice to it. Great for cooking in sauces, soups, scrambled eggs, and is also good used raw in salads. It stores well for approximately 6 months. Music is one of our most popular varieties. This porcelain garlic was brought over from Italy in 1980 by Al Music and named after this Canadian garlic grower. It’s an easy garlic to grow and and does well in cold climates. The dark green plant grows to 3 or more feet tall, producing a large bulb with 4-6 cloves per bulb which are easy to peel, making it a favorite for cooking. Music is a hardneck garlic with an outstanding flavor that is spicy but not overwhelming and stores well into the winter months. Excellent for pesto, salsas, marinades, and rubs. Garlic Scapes

Garlic Scapes are the center stem that is produced from the hardneck garlic bulb. It has a very short harvest time – approximately 3 weeks in the Spring. They have a lighter garlic flavor and can be used anywhere scallions are used. They are fantastic used in making pestos, hummus, soups and salads, or fried in olive oil or butter like string beans. If left on the garlic plants they will produce small bulbils, which are seeds for planting the following season, but will drain energy from the garlic bulb giving you a smaller bulb.
